Duck and Chinese Cabbage Quick Soup

  • 1/2 roast duck – cut into small pieces
  • 2/3 Chinese cabbage – wash & cut into strips
  • 15g vermicelli (glass noodles) – wash, soak & drain
  • 1 c fish or beef stock
  • 2 litres water
  • Salt & pepper to taste


Place the cabbage & stock into pot of boiling water. Boil for 5 minutes, then add the vermicelli boil for another 5 minutes. Finally add the rest of the ingredients, simmer for 5 minutes. Add salt & pepper to taste.
