Ingredients

  • 1 red snapper fish head – clean, pat dry & fry (use 1T oil & 2x 3 cm ginger – smacked) until golden brown
  • 200mls full cream milk
  • 3 pcs firm tofu
  • 3 coriander stalks with leaves
  • 1 tsp white pepper
  • 3L water
  • Salt to taste

Method

Place all ingredients (except salt & coriander) into pot of water (including the ginger). Bring the to boil. Reduce heat and simmer for 20 minutes. Remove any excess oil, then give it a good stir and add coriander & salt to taste.
