Snapper Veggie Soup

Ingredients

  • red snapper fish head – clean, ¬†then pat dry & fry (using 1 T oil & 2 pcs ginger smacked) until golden brown (discard ginger & placed in mesh bag – optional)
  • 3 potatoes – peel, wash & cut into pieces
  • 2 carrots – peel, wash & cut into pieces
  • 5 tomatoes – wash & cut into chunks
  • 4 pcs ginger
  • 3 litres water
  • 1t white pepper
  • Salt to taste

Method

Place all ingredients (except salt & pepper) into pot of water (including the ginger). Reduce heat and simmer for 3 hours. Remove any excess oil, then give it a good stir and add salt & pepper to taste.
