Ingredients

  • 300g lean pork – wash, drain & cover in 1T salt for overnight then blanched
  • 6 chicken drumsticks – blanched, skin removed & rinsed well
  • 4 x dried fish maw – soak overnight, rinse & drain well
  • 1/3 c north almonds – wash & soak in cold water for 3 hrs then drain well
  • 2/3 c south almonds (same as north almonds)
  • 3 pcs of ginger
  • 3 litres water
  • Salt to taste

Method

Place the almonds & 1 cup cold water into a food processor (grain finely). Keep the almond milk & place the processed almonds into a cooking mesh bag. Place all ingredients – almond milk & mesh bag (except salt) into pressure cooker. Cook for 50 minutes, natural release for 15 minutes, remove excess oil then add salt to taste.
