Ingredients

  • 6 pcs pork bones – blanched & rinsed well
  • 400g winter melon – peel, seeds removed, wash & cut into pieces
  • 10 shiitake mushrooms – soak overnight in water, wash & cut into stripes
  • 6 dried scallops – soak overnight in water & wash
  • 2 litres water
  • Salt to taste

Method

Place the bones & melon into pot of boiling water.  Boil for 20 minutes, then add egg and salt (& ginger) to taste.  Heat for a further 10 minutes.
