Salmon Tofu Tomato Soup

  • 1 Salmon head – clean well & pat dry
  • 300g firm tofu – wash & cut into 3 x 2 cm pcs
  • 3 truss tomatoes – wash & cut into wedges
  • 1 carrot – peel, wash & cut into pcs
  • 10g ginger – peel, wash & cut into pcs
  • 1/2 c full cream milk
  • 3 stalks of spring onions – wash & cut into 5cm pcs
  • 3 stalks of coriander – wash & separate leaves from stalks (keep stalks)
  • 1/2 t oil (for frying the salmon head)
  • 2 litres water
  • 1/2 t white pepper
  • Salt to taste


Fry ginger in oil for 1 minute, then add the salmon head – fry until both sides is golden brown. Bring the water to boil, add all the ingredients (except milk & coriander leaves) & cook for 25 minutes. Then add milk, 1/3 coriander leaves, salt & pepper, simmer for a further 10 minutes. Pour into bowls and garnish with the rest of the coriander leaves. Enjoy!
